It may be really difficult -- the game has a very limited number of dynamic models that show weapons. For example, the rakshasa model always has the same weapon and colors. Gnolls have an extended number of colors, but the only weapons that are going to show are: an empty hand, shortsword, and halberd. That is mostly why my unusual NPCs like Bristlelick, Varshoon or Afu-Zuuvi come with their own weapons, and why Verr does not use the usual rakshasa model. 

I myself do not plan on creating any race mods, but I think there are already some that add some options. Perhaps not the wildest ones, but still worth a look. You may, for example, look at this mod: https://github.com/dark0dave/Subrace-mod
